Bean Spread
Ingredients:
500 g beans, 1 carrot, 2 onions, oil, garlic, salt, pepper, paprika
Preparation:
Boil the beans in salted water. After boiling, drain the water and boil again (this is repeated 2-3 times). Boil the grated carrot and 1 (one) finely chopped onion and add the beans. Boil until they are cooked.
Drain the water and puree the vegetables. Mix in oil until it becomes like a spread. If the mixture is too dry, you can add some of the vegetable stock in which they were cooked.
Make a paste from garlic, salt, and oil, then add it (to taste) to the bean spread. Season with salt, pepper, and paprika. Place in a bowl.
Chop the second onion into thin slices and sautée it with a tablespoon of oil. Once caramelized, add in a tablespoon of the stock and more paprika to taste. Let it reduce then pick up with tongs and place on top of bean spread.
